Easy Keto/Low Carb Fudge- 7 Variations

I've been wanting to make this recipe for a long time, ever since I figured out Keto Sweetened Condensed Milk. I made this kind of regular fudge before for Christmas gifts one year and it was fun doing a bunch of different variations and flavors. Same goes for this fudge, you can use any combinations of keto chocolates, add ins and extracts you want to make an endless amount of different flavors of keto fudge. Included in this post is just 7 of the many you could make!







These keto fudge recipes all start with my keto sweetened condensed milk recipe. This keto sweetened condensed milk recipe is definitely a staple in my fridge or even freezer. You can make a huge batch, freeze then thaw in the fridge ready for one of my many recipes. I'll have many more recipes using it to come, for sure!


I tried 3 times to make sweetened condensed milk with erythritol and I couldn't get it to come out smooth and creamy like my allulose version. So pick up some allulose and make this deliciously creamy and smooth sweetened condensed milk. This is going to be a staple in my refrigerator for sure.


I doubled this recipe and had enough for 2 1/2 batches of fudge


Keto Sweetened Condensed Milk (Big Batch)

2 Cup Heavy Cream

3/4 Cup Allulose

4 Tbs. Salted Butter

1 tsp. Vanilla Extract

Instructions:

  1. Place heavy cream and Allulose in a heavy bottom sauce pot and turn heat to medium and whisk until all the sweetener is dissolved

  2. Once mixture starts to simmer, reduce heat to medium low and simmer for 20-30 minutes, depending on how low the heat is set, stirring frequently

  3. When the mixture has reduced to a little over 2 Cups of liquid (I test in a measuring cup first) and it has become a tan color, turn off heat, strain into heat proof vessel and add the butter and vanilla extract, stir to combine

  4. Chill for at least 1 hour in the refrigerator or overnight (stir every ten minutes if possible to distribute the butter, not crucial)

Macros for sweetened condensed milk:

0 g Fiber

13 g Total Carbs

13 g Protein



Once you have a big batch of keto sweetened condensed milk made you can go right into making any one of these fudge recipes. You don't even need to chill it first. I tried many different keto chocolates for the fudge recipes. The only one that didn't work was Lily's Peppermint Chocolate chips because it set too soft. You can just use Lily's white chocolate chips and add peppermint extract or just minus the sweetened condensed milk a little for the recipe will make it a little firmer. The more product you add with allulose in it the softer the outcome will be. Other than that, I used Baked Believe Semi-Sweet chocolate chips, Lily's Dark and White chocolate chips and Choc Zero White Chocolate chips and they all worked well. The bottom line for keto chocolate is to use one that you enjoy the texture and sweetness of because that is the prominent flavor and texture that will come through in the fudge.


The ratio of chocolate to sweetened condensed milk for most other recipes is 12 ounces of keto chocolate, 14 ounces of sweetened condensed milk. The only exception is if you are adding another liquid element to the fudge like in my peanut butter fudge recipe. I had to decrease the amount of sweetened condensed milk so that it would be a little firmer. Then the add-in amounts are kinda up to you, I have amounts but if you want to add more or less or different stuff, feel free. The extract for a full batch is between 1-2 teaspoons but always start with less and add as you go and taste before you put it into the desired pan to set to make sure it has the flavor you want.


You can also do half batches of these recipes, I just divided an 8x8 with aluminum foil dividers wrapped in plastic wrap.

Keto Chocolate Peppermint Fudge


12 Ounces Keto Semi-sweet, Dark or Milk Chocolate Chips

14 Ounces Keto Sweetened Condensed Milk

1 teaspoon Peppermint Extract

Optional add-ins- Keto peppermint candies/keto chocolate peppermint cookies/keto mint marshmallows etc.


Instructions:

  1. Pour warm or room temperature keto sweetened condensed milk over keto chocolate chips in a microwave safe bowl

  2. Add extract then mix until the chips are no longer melting

  3. Heat in microwave on 50% for 15 second increments until the temperature is around 95 degrees, trying not to exceed 100 degrees

  4. Continue to stir until all the chips are melted

  5. Add in add-ins if using then pour into a lined 8x8 baking dish or container of some kind

  6. Let chill for several hours before cutting into pieces, I like doing 6x6 to get 36 pieces

  7. Store in refrigerator for longevity


Keto Almond Joy Fudge


12 Ounces Keto Semi-sweet, Dark or Milk Chocolate Chips

14 Ounces Keto Sweetened Condensed Milk

1 teaspoon Almond Extract or Coconut or both

1/4 Cup Chopped Almonds

1/4 Cup Unsweetened Coconut Flakes


Instructions:

  1. Pour warm or room temperature keto sweetened condensed milk over keto chocolate chips in a microwave safe bowl

  2. Add extract then mix until the chips are no longer melting

  3. Heat in microwave on 50% for 15 second increments until the temperature is around 95 degrees, trying not to exceed 100 degrees

  4. Continue to stir until all the chips are melted

  5. Add in half of the almonds and coconut and mix then pour into a lined 8x8 baking dish or container of some kind

  6. Top with the remaining almonds and coconut and let chill for several hours before cutting into pieces, I like doing 6x6 to get 36 pieces

  7. Store in refrigerator for longevity


Keto Peanut Butter Fudge


12 Ounces Keto White Chocolate Chips (I used Choc Zero)

10 Ounces Keto Sweetened Condensed Milk

6 Ounces Natural Peanut Butter (no sugar added)

1 teaspoon Vanilla Extract

Optional add-ins- Roasted peanuts/keto chocolate peanut butter cookies/keto peanut butter cups etc.


Instructions:

  1. Pour warm or room temperature keto sweetened condensed milk over keto chocolate chips and peanut butter in a microwave safe bowl

  2. Add extract then mix until the chips are no longer melting

  3. Heat in microwave on 50% for 15 second increments until the temperature is around 95 degrees, trying not to exceed 100 degrees

  4. Continue to stir until all the chips are melted

  5. Add in add-ins if using then pour into a lined 8x8 baking dish or container of some kind

  6. Let chill for several hours before cutting into pieces, I like doing 6x6 to get 36 pieces

  7. Store in refrigerator for longevity


Keto Maple Walnut Fudge


12 Ounces Keto White Chocolate Chips

14 Ounces Keto Sweetened Condensed Milk

1 teaspoon Maple Extract

4 Ounces Chopped Walnuts


Instructions:

  1. Pour warm or room temperature keto sweetened condensed milk over keto chocolate chips in a microwave safe bowl

  2. Add extract then mix until the chips are no longer melting

  3. Heat in microwave on 50% for 15 second increments until the temperature is around 95 degrees, trying not to exceed 100 degrees

  4. Continue to stir until all the chips are melted

  5. Add in half of the walnuts and mix then pour into a lined 8x8 baking dish or container of some kind

  6. Top with the remaining walnuts and let chill for several hours before cutting into pieces, I like doing 6x6 to get 36 pieces

  7. Store in refrigerator for longevity





Keto Salted Caramel Turtle Fudge


12 Ounce Lily's Salted Caramel Chocolate Chips

14 Ounces Keto Sweetened Condensed Milk

1 teaspoon Caramel Extract (optional)

4 Ounces Chopped Pecans


Instructions:

  1. Pour warm or room temperature keto sweetened condensed milk over keto chocolate chips in a microwave safe bowl

  2. Add extract then mix until the chips are no longer melting

  3. Heat in microwave on 50% for 15 second increments until the temperature is around 95 degrees, trying not to exceed 100 degrees

  4. Continue to stir until all the chips are melted

  5. Add in half of the pecans and mix then pour into a lined 8x8 baking dish or container of some kind

  6. Top with the remaining pecans and let chill for several hours before cutting into pieces, I like doing 6x6 to get 36 pieces

  7. Store in refrigerator for longevity


Keto Butter Pecan Fudge


12 Ounces Keto White Chocolate Chips

14 Ounces Keto Sweetened Condensed Milk

2 teaspoon Butter Extract

4 Ounces Chopped Pecans


Instructions:

  1. Pour warm or room temperature keto sweetened condensed milk over keto chocolate chips in a microwave safe bowl

  2. Add extract then mix until the chips are no longer melting

  3. Heat in microwave on 50% for 15 second increments until the temperature is around 95 degrees, trying not to exceed 100 degrees

  4. Continue to stir until all the chips are melted

  5. Add in half of the pecans and mix then pour into a lined 8x8 baking dish or container of some kind

  6. Top with the remaining pecans and let chill for several hours before cutting into pieces, I like doing 6x6 to get 36 pieces

White Chocolate Peppermint Fudge

Macros:

All the macros on these fudge recipes are going to rely heavily on the kind of keto chocolate chips you use. The Lily's salted caramel turtle, Baked Believe Semi-Sweet Chocolate peppermint, Lily's Dark Chocolate Almond Joy and the Choc Zero peanut butter fudge were 1 Net Carb each if cut into 36 pieces. Lily's White style chocolate chips seem to be a lot higher in carbs than Choc Zero so if using Lily's White Chocolate chips those pieces of fudge could be up to 3 Net Carbs per piece.
