Keto Chocolate Dipped Ice Cream Cone

I loved drumstick or also known as nutty buddy's as a kid. We use to get them all the time so I figured it was about time to create a keto version. After I figured out the keto waffle cone I had most of the other elements already, it was just putting them all together to create this delicious treat!

To keep the cones upright I bought a special contraption but I'm sure you can use a muffin tin or tin foil to keep them on their side, but this comes in handy- https://amzn.to/43WhzVu





Once the cones are made, I filled with chocolate ganache which is just equal weight of keto chocolate and steamed heavy cream. If you don't have a scale, definitely count out an ounce of chips (it says how many are typically in an ounce on the package) and measure that and do it 4 x to get 4 ounce of chocolate and use 4oz. or a half cup of cream to fill all 16 cones. Once the cream is steaming pour over the chips and let sit for a few minutes before whisking to combine, should be thick enough to coat the inside of the cones and pool a little in the bottom. Whatever chocolate you use will have an impact on the macros for each cone. I try to use a chocolate that is one carb per half ounce.

The keto sweetened condensed milk recipe I always make a huge batch and freeze so I have enough for anything I want to make. I only used about half of a batch of ice cream to fill the 12 cones I did but the rest can always be frozen and thawed out again to make another dessert. So to make one batch of no churn ice cream you need:


300ml Heavy Cream (1 1/4 Cup)

250ml Keto Sweetened Condensed Milk- https://youtu.be/Qk7KJZoQzhU

8-15g Powdered Erythritol Blend (optional)

Liquid Stevia (to taste, optional)

1 tsp. Vanilla Extract or any flavor you want


Instructions:

  1. Whip the cream with the sweetener and vanilla until soft peaks then stream in the sweetened condensed milk and whip until stiff peaks

  2. I used 2 piping bags, one with a small hole to fill the bottom of the cones then one with a bigger open tip to pipe a nice round top of ice cream on top the come

  3. Let harden completely in the freezer before dipping in the chocolate coating


Then the last step is the chocolate coating which can be done several ways. I have my ice cream bar videos that use keto chocolate or bakers chocolate. In this recipe I used a cocoa powder coating which is very simple I cut it down a little from the video measurements because you don't need that much-


Chocolate Coating for 16 cones double dipped


90 ml Coconut Oil (about 1/3 cup)

38g Cocoa Powder (about 4 Tbs.)

15-30g Powdered Erythritol (to taste) or alternately use a little pure powdered stevia/monkfruit

Liquid stevia to taste (flavored can be used also)

1 oz. Roasted Peanuts, finely chopped (about a 1/4 Cup)


Instructions:

  1. Place coconut Oil into a tall container and sift in the cocoa powder and sweetener

  2. Give a little stir and heat on 50% power for 10 second intervals until just melted

  3. Whisk everything together as they are melting add the liquid if using and taste for sweetness level, remember when frozen food tastes less flavorful and less sweet

  4. Once mixture is cool, less than 84 degrees dip an ice cream cone in the chocolate and allow to harden then dip again and sprinkle the peanuts around the edge of the chocolate coating

  5. Let freeze for a few more hours then place in a ziplock freezer bag for a few months

Macros with a full 16 pizzelles, a batch of no churn ice cream, 8 ounces of keto ganache and the chocolate coating and peanuts
