Wanted a simple low carb mousse I could whip together and use for a bunch of different things. This keto peanut butter mousse is delicious just on it's own in a parfait glass. But there are many different things you can add to it, and different ways you can use it. Can use it as a pie filling, cake filling, or brownie topping and also as a dip for berries or your favorite keto cookies. Can layer it in a glass with keto whip cream and keto cake or cookies with a chocolate ganache and chopped nuts to make a fancy dessert too. Love versatile recipes that can be used in many different ways, and this is one of them you should keep in your arsenal for many occasions.
There are many options for this recipe, from the sweetener to the nut butter and the flavorings. I prefer to use a powdered monkfruit/erythritol blend for my recipes instead of straight erythritol but that is totally a replacement option. The only thing is to make sure the sweetener is in powdered form. If you don't have powdered, you can put granular in a spice/coffee grinder or a high powered blender and pulse until powdered. You can also use liquid stevia to sweeten the dessert. I like to use a combination of sweeteners because monkfruit/erythritol can still have a cooling effect and too much liquid stevia could leave a bitter aftertaste for some people.
The nut butter I chose of course was peanut butter but we have so many options out there that can be used. The only difference it will make in the recipe is the consistency and sweetness. Just keep in mind what added ingredients are in the nut butter you choose. Many of our keto flavored nut butters, which are delicious, have added sweetener already. So you may need to cut down the sweetener in the recipe. I used a peanut butter that the only ingredient was peanuts so I added salt to counter balance the sweetness. It's all about balance in dessert recipes, so desserts like this it's easy to add small amounts at a time taste and adjust as needed, you can always add more but can't take away. The consistency of your nut butter will determine how much alternative milk you add to make it a looser consistency to fold in the whipped cream. Some natural peanut butters are insanely thick so you may need to add more unsweetened milk alternative to the mix.
Just some different nut butters you could use are walnut, pecan, macadamia nut butters, keto chocolate hazelnut spread. Perfect keto has many flavors that are delicious like a snickerdoodle or almond butter and jelly. They do have sweetener added to them so you may not need anything but some liquid stevia to the whipped cream. So you can even add spices and flavorings to the mousse if using a plain nut butter. Can add some cinnamon, nutmeg, pumpkin spice, or cocoa powder along with different extracts like strawberry, maple, coconut, banana, rum or just plain vanilla, all would be delicious! So many possibilities!!!

Keto Peanut Butter Mousse Recipe
8 oz. Cream cheese (softened)
8 oz. Natural Peanut butter (1 Cup) ANY keto friendly nut butter
30 g Powdered Monkfruit Sweetener (to taste, any powdered alternative sweetener you prefer)
2-4 oz. Unsweetened alternative milk (1/4-1/2 Cup) (oat, flax, macadamia, almond etc.)
8 oz. Heavy Cream (chilled, 1 Cup)
1 tsp. Vanilla Extract (any flavoring you like)
1/2 tsp. Salt (only if your nut butter you use has no salt added)
Liquid stevia, flavored or not, too taste (or more of a powdered sweetener)
Instructions:
Beat the softened cream cheese with sifted powdered sweetener of choice with a hand mixer or in a stand mixer, until smooth and fluffy, scraping the bowl several times
Add in nut butter of choice and beat until fully incorporated
Add in a few splashes of the alternative milk at a time until it is creamy and thin enough to fold in the whipped cream, set aside
Whip the chilled whipping cream with a few drops of liquid stevia, to taste, and whip to stiff peaks
Fold in half of the whip cream into the peanut butter/cream cheese mixture then fold in the other half until fully combined
Place or pipe into portion bowls or glasses and chill for 30 minutes (can eat right away if you can't resist) I suggest 8-12 portions, makes roughly 20-24 oz. of mousse

Calories, fat and net carbs are kind of high for this dessert to just eat by itself, if eating more than 1/4 cup.
