Keto English Trifle

If ever there were an easy, throw-together summer dessert that is sure to wow a crowd, it would be an English trifle. A trifle is light, refreshing, slightly sweet, slightly tart, delicious, and perfect for summer holidays. This versatile dessert is also very easy to assemble with many different ingredients you may already have on hand. The possibilities are endless: you can use fresh or frozen berries, jam or preserves, stabilized whipped cream or pastry cream, cream cheese, pudding, pound cake, ladyfingers, chiffon cake, fudge sauce, or ganache—all keto, of course. Use your imagination to create a unique and beautiful dessert.







The recipe below uses fresh strawberries, strawberry jam, pastry cream made into a diplomat cream, pound cake, ladyfingers, stabilized whipped cream, and fresh berries to decorate the top. I did not include macros because the carb count for this dessert can vary greatly depending on the ingredients you choose.

Macerating Fresh Strawberries


Here is a simple and quick trick for macerating fresh strawberries without using a lot of bulk sweetener. Choose a heatproof bowl that fits snugly over a saucepan, or use a double boiler if you have one. Add a small amount of water to the saucepan and bring it to a gentle simmer over low heat. Slice the strawberries into the heatproof bowl and add liquid stevia to taste. If desired, add vanilla extract, Grand Marnier, or Cointreau for extra flavor, keeping in mind that the liqueurs will increase the carb count slightly. Cover the bowl tightly with plastic wrap and set it over the simmering water. Let the berries warm gently, shaking the bowl occasionally, until they release their juices and soften. Keep the water at a steady simmer and do not let it touch the bottom of the bowl. Cook for 8-10 minutes until you see the strawberries swimming in juices.


Keto Diplomat Cream


Ingredients

1 Full Batch of Keto Pastry Cream (https://youtu.be/2MiceqIvOeg)

1 cup Heavy Cream

1 tsp. Vanilla extract or my vanilla bean paste (https://youtu.be/J9y9cJKDNdk)

Liquid Stevia to taste


  1. Add the chilled pastry cream to a medium mixing bowl and whisk briefly until smooth.

  2. In a separate bowl, combine heavy cream, vanilla, and liquid stevia. Using an immersion blender or a hand mixer fitted with the whisk attachment, whip the cream until stiff peaks form.

  3. Gently fold the whipped cream into the pastry cream in two additions, folding just until no streaks remain. Cover and refrigerate until ready to assemble the trifle.


Keto Strawberry Jam


Ingredients

12 oz fresh or frozen Strawberries

1/4 cup Water

3/4 cup Allulose

1 Tbs. Lemon Juice


Instructions

  1. Add the strawberries, water, Allulose, and optional lemon juice to a medium saucepan. Stir until the berries are evenly coated.

  2. Cook over medium heat until the mixture comes to a gentle simmer, stirring occasionally so the berries do not stick to the bottom of the pan.

  3. Continue simmering until the strawberries soften, release their juices, and begin to break down. Mash them lightly with a spoon or potato masher if you prefer a smoother jam.

  4. Continue cooking until the jam is thick and glossy.

  5. Remove the pan from the heat and transfer the jam to a clean bowl or jar. Let it cool completely; it will continue to thicken as it cools.


Stabilized Whipped Cream


Layering the Trifle

For the prettiest presentation, assemble the dessert in a trifle bowl. If you don’t have one, use a clear glass bowl with high sides so the layers remain visible.


  1. Arrange an even layer of cubed pound cake in the bottom of the bowl, filling in any gaps so the base is sturdy.

  2. Stand the ladyfingers upright around the inside wall of the bowl. Use them whole or cut them in half, depending on the height of your bowl, so the finished layers are visible through the sides.

  3. Spoon some of the juice from the macerated strawberries over the pound cake to lightly moisten it. Avoid soaking the cake too heavily, or the trifle may become watery.

  4. Spread a layer of diplomat cream over the cake. Use an offset spatula or the back of a spoon to smooth the cream all the way to the edges so it shows cleanly through the bowl.

  5. Spoon strawberry jam around the outside edge of the bowl first, where it will be most visible. Add the macerated strawberries, without a lot of liquid, toward the center, then smooth everything into an even layer.

  6. Add a second layer of cubed pound cake, then spoon a small amount of strawberry juice over the cake to moisten it lightly.

  7. Spread another layer of diplomat cream over the cake, again smoothing it to the edges for a neat, visible layer.

  8. Combine the drained macerated strawberries with a little strawberry jam, then spread a thin layer of the mixture over the cream.

  9. Sprinkle a few broken pieces of pound cake or ladyfingers over the strawberry layer. This helps absorb extra juice and keeps the finished trifle from becoming too loose.

  10. Finish with stabilized whipped cream. You can spread it into a smooth top layer, pipe it decoratively around the edge, or do both. Garnish with fresh berries just before serving, then chill the trifle until ready to serve.
