Keto Whipped Ganache Frosting

By far my favorite frosting for keto even though it is higher in carbs than a buttercream. It is rich and decadent and melts in your mouth, just like the inside of a truffle. And I am all about chocolate on chocolate desserts, candy and pastries. It's also simple as long as you plan ahead and make the ganache before the cake. It can even be made a day or two in advanced.





A ganache is equal parts chocolate and heavy cream by weight and usually uses semi-sweet or bitter-sweet chocolate. But there is no keto bittersweet chocolate so we either have to use semi-sweet or dark chocolate. The nice thing is we can use liquid stevia to sweeten our ganache if need be. I used Baked Believe dark chocolate chips for my whipped ganache but you can use any kind of chips you want but macros will be different. For best results you should weight out the chocolate chips. Nine ounces of these Baked Believe chocolate chips are roughly 1-1/2 cups if you don't have a scale.





To make whipped ganache you need it to be solid at room temperature. So I suggest making the ganache a day or 2 ahead, it will stay fine covered on the counter top until needed. You can make it the day of and let it get solid on the countertop for a few hours but if it's summer time it may take quite some time. During winter it took less than two hours. You can put it in the refrigerator for an hour or so until it is stiff also, but you don't want it refrigerator cold because it will be hard to whip.

If you are using whipped ganache for a filling and a frosting you may need quite a bit more frosting. I suggest using something lower in carbs for the filling. The below frosting recipe was enough for a frosting ring to keep the filling in, a layer all around and some piping decoration on the top and bottom. If you use more frosting it will increase your carb count per slice. The cake below





Ganache Frosting

9 oz. Keto Dark Chocolate Chips (I used Baked Believe)

9 oz. Heavy Cream

1/2 tsp. liquid stevia (optional to taste)

1/2-1 tsp. Extract of choice (optional)


Instructions:

  1. Make ganache first because you need it set completely before whipping into the frosting

  2. Heat the cream on stove or in microwave until just simmering below 180 degrees

  3. Pour over the chocolate chips, making sure the chips are completely covered

  4. Let sit for 5 minutes

  5. Slowly start whisking in the middle and slowly working the cream and chocolate together

  6. Once a nice silky ganache has formed let harden at room temp for several hours or place in the refrigerator for an hour or so until solid

  7. Now make your cake!!!

Once your cake is cooled, get everything set up to to frost before whipping up the ganache. Once the ganache is whipped, you want to fill and frost right away.
