Keto Nutty Candy Bar
My Nut Mix
112g/about 1 Cup Mixed Nuts (broken into small pieces after measured) I used one that was 2g Net Carbs per 1/4 Cup
112g/about 1 Cup Pecan Halves (broken into small pieces after measured)
120g/about 1 Cup Pepitas
30g/3 Tbs. Hemp Hearts
Sticky Syrup
100g/ 1/2 Cup- 3/4 Cup Allulose (depends on the grind of your brand)
10g/1 Tbs. Inulin
56g/4 Tbs. Salted Butter
1 tsp. Vanilla Extract
20g/1/4 Unflavored Whey Protein Isolate
Add-ins-
4oz./about 1 Cup Keto Chocolate Chips
(Can add Coconut, protein puffs, different seeds like sunflower, chia or flax)
Instructions:
Measure and prep all the nuts into a medium sized bowl, making sure all the nuts are relatively the same smaller pieces
Measure out the protein powder and chocolate chips, place 1 oz of chocolate chips in the bottom of a silicon 8x8 pan or into an 8x8 pan that has parchment and spray
In a medium sized pot place the butter and set it on low heat to melt, measure the allulose and inulin into a bowl and whisk together, add to the melted butter and stir until the sweetener begins to melt, have a whisk handy and a place to set down the hot pot
Once melted, just swirl the pot to stir and continually take the temperature with a laser thermometer and cook to 290 degrees, it doesn't take long so don't leave unattended
When the sweetener reached 290 degree pull off the heat and whisk in the vanilla extract, whisk in the whey protein then add to the bowl of nuts and mix well, let cool to under 200 degree, placing on a cool surface to speed up the process, could take over ten minutes
Add in the rest of the chocolate chips and mix well, breaking up the clumps, place mixture in the 8x8 pan and compact it as much as possible, place in the refrigerator to set up completely
Once set it should come out of the pan easily, place on a cutting board, cut in half then into about 1 inch bars to get 14 nutty candy bars, can keep on the counter in a ziplock bag or in the refrigerator for a month or more
