Easy Keto/Sugar Free Nutella

A super easy recipe with just a few ingredients that is a nice change from the regular old peanut butter for our low carb bread. There are only a few ingredients and the hardest part for me living in a rural area was getting shelled hazelnut that weren't expired. I bought 3 different brands from Amazon and 2 of the 3 were expired when they arrived. I tried making the spread with some out of date hazelnuts that tasted ok but once you start blending and the oils started coming out it started to smell like rancid oil and did not taste good. The next major ingredient is chocolate, I went the route of melted keto chocolate because it does most of the work for you. It has the sweetener and some oil in it already so we have to add less of those ingredients. You can go the route of adding cocoa powder but will have to add more oil and sweetener.

I chose bake believe dark chocolate chips but any will work but the sweetness just may need to be adjusted. The sweetness of the spread is completely customizable to your taste. I would go with less sweetener to start, taste and adjust as you do as you can add sweetener at any point while you are blending it to get smooth.


I added some stevia and monkfruit/erythritol to sweeten to my taste but any sweetener will work. I add several different sweeteners because adding all one sweetener like stevia it can become bitter or erythritol is can have too much of the cooling effect.


Then the last few ingredients are coconut oil, salt and vanilla in very small amounts. The oil is to just make it a bit more spreadable at room temperature and makes it easier to melt the keto dark chocolate. Salt I added to bring out the sweetness and I didn't buy salted hazelnuts. and just a little vanilla for added flavor.


The hardest part besides getting the good hazelnuts is blending it up enough without over heating the equipment you are using. Using a smaller blender or food processor is easier to get a nice smooth nutella faster. It will work in a bigger food processor but it will take much longer and mine actually shut off in the middle of making the nutella.

Sugar Free Hazelnut Spread


10oz./about 2&1/2 Cups Roasted Hazelnuts

4oz./about 3/4 Cup Keto Dark Chocolate Chips (can use any you like)

9g/2 tsp. Refined Coconut oil (Can use unrefined but may add a bit of coconut flavor)

1 Tbs. Powdered Monkfruit/Erythritol Sweetener (to taste)

1/4 tsp. Liquid Stevia (to taste)

1/4 tsp. Salt

1/2 tsp. Vanilla Extract


Instructions:

  1. Place the hazelnuts in a small food processor and blend until just pulverized

  2. Measure out the chocolate and oil into a microwave safe container and microwave on 50% power until melted

  3. Add the rest of the ingredients to the food processor and turn on while drizzling in the melted chocolate

  4. Blend until smooth, creamy and more liquid, it will heat up as you blend it, so you want it pretty thin, as it will set up stiffer once cooled, stop and scrap down several times during the process, can take 5-10 minutes depending on your food processor
