If you’re looking for a fun Valentine’s Day dessert and you love chocolate, this chocolate fondue is such a good option. It’s super easy to customize with different kinds of chocolate, flavorings, and all your favorite dippers, so you can really make it your own.

Keto Chocolate Fondue

Since fondue is basically a ganache, I really recommend making it by weight if you can. It gives you the most consistent results. Just keep in mind that different brands of keto chocolate can behave a little differently, so you may need to tweak the cream or chocolate a bit to get the texture just right. The amounts below are a great starting point.


Yield: This makes enough for about 2 people, but you can absolutely double it or make two flavors if you want a little variety.


·         4 oz. (about 3/4 cup) keto chocolate chips. If you’re using milk or white chocolate, you may need a little more chocolate. If you’re using dark chocolate, you may need a little more cream.

·         4 oz. (1/2 cup) heavy cream

·         1/4 to 1 tsp. liquor or extract, to taste. Start small and add more if needed.

·         Optional: flavored powders, like beet powder, for extra flavor or color. I used Power Beets Acai Berry Pomegranate to turn white chocolate pink.

Instructions

  1. Before you make the fondue, get all of your dippers ready first since the fondue comes together really fast, usually in under 5 minutes. Have your serving bowl or fondue pot ready too. If you want, you can warm a ceramic dish in the oven ahead of time so the fondue stays warm a little longer.

  2. Weigh your chocolate chips into a heat-safe bowl, and measure the cream into a small saucepan or microwave-safe dish.

  3. Heat the cream until it’s just scalded. You should see a little steam, a thin film on top, and tiny bubbles around the edges.

  4. Pour the hot cream over the chocolate chips and make sure the chocolate is fully covered. Loosely cover the bowl and let it sit for 3 to 5 minutes.

  5. Whisk slowly, starting in the center and working your way out, until everything is smooth and glossy. If it feels too thick for dipping, add a small splash of warm cream. If it seems too thin, add up to 1 more ounce of chocolate. If needed, you can gently reheat it at 50% power in 10-second bursts.

  6. Add your flavorings a little at a time and taste as you go. You’ll usually need less extract and a little more liquor. If the fondue starts to look separated, just stir in cream a tiny bit at a time until it smooths back out.

  7. Transfer it to your warm serving dish and serve right away. If you reheat leftovers later, you may need to add a little more cream because it can firm up and split a bit after cooling.
