I recently developed a delicious 0 carb marshmallow recipe so I had to try my hand at a keto/low carb crispy cereal treat. Since our marshmallows are made with such simple ingredients and our cereals are so different than the traditional rice crispy treat, this is kind of a procedure rather than a recipe. There are so many variations you can make with different cereals and add-ins!

It all starts with my keto marshmallow recipe. One batch of my keto marshmallow recipe will make several batches of keto cereal treats. Depending on how they turn out will kind of have an effect on the texture of the cereal treat you make. It will work no matter what though!

I do suggest to cut the marshmallows into small pieces for the cereal treats, you can also make it in a 9x13 pan to make it easier to cut small.
After making the marshmallows, the next decision is the cereal you want to use. There are several keto/low carb cereals on the market with various ingredients and carb counts. Make sure to check labels, even if it says keto on the box, it may be higher carb than you would want to have on keto. I tried 3 different brands and flavors of keto cereal and they all worked with various amounts used in the mix. Depending on the shape of the cereal you may need more or less cereal by weight, to use up all of the marshmallow/butter mixture.

After making the keto marshmallows and choosing the cereal, you can also add different add-ins into the cereal treats. Some options are different flavored keto chocolate chips, I did some with butterscotch and some with white chocolate, both were good. But they would also be good with peanut butter, milk, dark, or salted caramel chocolate chips. You can also add different extracts to compliment the flavor of cereal you choose like, Caramel, Maple, Strawberry, Vanilla etc. You can also dip them in melted chocolate, keto chocolate is a little more difficult to work with than regular chocolate, I have a few video tutorials on how to work with them and the differences in them.

Keto/Low Carb Cereal Treats
56g/4 Tbs. Salted Butter
170g/about 3 cups small cubed keto marshmallows
1 tsp. Extract of choice (I used Vanilla)
70g/ about 1/2 Cup Keto Chocolate Chips- Optional
100-150g/about 3 Cups of Keto Cereal- The smaller the pieces the more you will need
Instructions:
Make the keto marshmallows a day ahead then cut them into small squares
In a medium pot melt the butter completely, while that melts butter an 8x8 dish and measure out 100-150g or 3 Cups of cereal, extract and any add-ins
Once the butter is melted add the marshmallow to the pot and stir continuously with a heat proof spatula until all the marshmallows are melted
Take half off the heat when there are only a few small pieces of marshmallows left in the pot, you do not want to continue caramelizing the allulose in the marshmallows with too much heat
Once everything is melted add the extract and stir to combine
Add the cereal a little at a time and stir, half on the heat until there is no marshmallow/butter mixture left in the bottom of the pot and all the cereal is nicely coated
Once it is nicely mixed and all the marshmallow/butter mixture is coating the cereal, add the add-ins if using and mix well, then scrap into an 8x8 pan and compress the treats as much as you can
If the mixture is too sticky and sticking to the spatula, you can use a little oil spray to coat the spatula
Once compressed you can let sit on the counter overnight or put into the refrigerator for several hours to harden
Slice into 6 treats (can coat bottoms in chocolate at this point if you like) and keep on the counter in an airtight container for up to a month
