Pesto Bacon Ranch Cheese Ball

I wanted a delicious and easy appetizer to go along with my protein crackers that would be a crowd pleaser. I had pesto on hand since I had a basil plant and have been making pesto every few weeks and wanted a recipe I could you my ranch seasoning mix in that I always have on hand to make homemade ranch dressing. You can just use jarred pesto and a Hidden Valley Ranch seasoning packet but I try to avoid maltodextrin giving extra hidden carbs that are not accounted for on the packet and seed oils found in most jarred pesto.


This recipe is very customizable but the amounts I used, is a good balance of herb freshness, smokey bacon and creamy ranch flavor.
Pesto Bacon Ranch Cheese Ball Recipe
2-8oz. Blocks Cream Cheese Softened
1oz./4 Tbs. Ranch Seasoning Mix (https://youtu.be/Z7cGABKZXls) (One Packet)
1oz./2 Tbs. Pesto (https://youtu.be/q-PMOFBFvXw)
1oz./1/4 Cup Shredded Cheddar Cheese
For Rolling:
1oz./about 3 slices cooked bacon
1oz./1/4 Cup Shredded Cheddar Cheese
Fresh Herbs (Basil, Parsley, Dill)

Instructions:
Pull out cream cheese a few hours ahead of time or you can place in a microwave safe bowl and heat on 50% power for 30 seconds, if not softened you can use a kitchen mixer with a paddle attachment to mix the ball
Make a batch of pesto (can last over a month in the fridge or can freeze in ice cube trays) and a batch of ranch seasoning mix if using homemade and cook bacon
Mix the cream cheese, pesto, ranch mix and cheese together in a bowl until well combined, place mix into a large piece of plastic wrap in a round pile, gather up the plastic wrap around the ball and twist, smoothing out the ball (I keep about a half cup out so the ball isn't too big, still enough for 15-20 people for an app)
Place in the refrigerator while you prepare the rolling mixture by chopping the bacon, cheese and herbs into a fine dice and place on a plate to roll
Unwrap the cheese ball and place the nice round side down into the bacon mixture and pack it around the sides and place on a serving plate and keep refrigerated, pull out of fridge 30-1hr before serving
(leftovers are delicious as a spread for sandwiches, bagels, or in pasta dishes)
