Easy Spinach Artichoke Dip A Perfect Low Carb Dip

A super quick and easy dish perfect to take to your friends or families house for the Holidays and pairs great with my High Protein Crackers or Crunchy Pretzel sticks!

A great recipe to make ahead and have ready to pop in the oven a half hour/hour before party time. One you can double or triple depending on the amount of people at the party. Obviously the bigger the batch the longer it will take to bake. If it is refrigerator cold I would cover it in aluminum foil and bake for at least 20 minutes before uncovering and baking until bubbly then broiling to get a nice brown, crispy top.
This is definitely a recipe that you can customize to your liking but altering the ingredients will change the carb count. Even though all the ingredients are low carb and technically keto friendly, they all have a few carbs in them so adding more of anything will add a few carbs to the dip.
Spinach Artichoke Dip
1-8oz Block Cream Cheese (Softened)
1/4 Cup/56g Sour Cream
4oz/1 Cup Shredded Mozzarella Cheese (Divided)
4oz./about 1 &1/4 Cup before defrosted- Frozen Chopped Spinach (Defrosted and Drained ends up being 2oz.)
Can use fresh Also, Sauteed, drained and chopped
1/2 Cup/3oz. Quartered Artichoke Hearts (Drained and Chopped)
1/4 tsp. Salt
1/4 tsp. Pepper
1/2 tsp. Granulated Garlic
1/2 tsp. Minced Dried Onion or Granulated Onion
Instructions:
If baking right away, preheat oven to 350 degrees and pull out the cream cheese to soften and the spinach to thaw, if you don't have time to wait you can microwave the cream cheese on 50% power for 30 seconds and the spinach until thawed
Mix all the ingredients together reserving 3/4 Cup of the mozzarella for topping, taste for seasoning and place into a sprayed 8x8 baking dish and bake for 20 minutes or until starting to brown and bubbly
Broil for 1-3 minutes to brown the top, serve immediately with your favorite low carb cracker. chip or pretzel
