Keto/Low Carb Sugar Free Peanut Butter Hot Fudge Sauce

I am kind of obsessed with ice cream, so when I went keto that was the first recipe I upgraded because I had to have something that tasted like the real thing. Since then I have come up with many variations and accoutrements of and for my keto ice cream. I pretty much have everything you would ever need or want for a keto ice cream sundae, now even Keto Hot Peanut Butter and Butterscotch Sauce!

Making a hot keto sundae sauce is pretty simple, you just need to make my keto sweetened condensed milk, you can see the recipe video here -https://youtu.be/Qk7KJZoQzhU . You can make a huge batch of this and it will keep in the fridge for a few weeks but you can also freeze it and just let it thaw over night in the fridge.

Then just choose your favorite keto peanut butter chip, I used Choczero in the video recipe but have also used Lily's keto peanut butter chip. They are both 1 carb for a half ounce, so the carb count will be the same if you use either. Then for the peanut butter hot fudge sauce I added some natural creamy peanut butter. For making any other kind of hot sundae sauce you can add just some salted butter.


Choczero has butterscotch chips also that are 1 carb for a half an ounce but Lily's also has had butterscotch chips that were a little higher in carbs. I haven't been able to find them in awhile though. They are probably a seasonal item just like peppermint and pumpkin spice. But you can use this recipe with any keto chips you like. But if you use anything other than dark or semi-sweet chips you may have to add an extra ounce or two of chips in order to make a thick sauce that with be a little runny while warm but get thick when it hits the ice cream.

Keto Peanut Butter or Butterscotch Fudge Sauce Ingredients


7 oz./3/4 Cup+2 Tbs. Keto Sweetened Condensed Milk (https://youtu.be/Qk7KJZoQzhU)

4.5oz./about 3/4 Cup Keto Peanut Butter or Butterscotch Chips

1 Tbs./.5oz./14g Butter (I used salted if using unsalted ad a pinch of salt)


Instructions:

  1. Heat the sweetened condensed milk in the microwave until hot and runny, around 150 degrees

  2. Measure out the chocolate chips and butter into a separate container and pour the hot sweetened condensed milk over the chips and butter making sure it is all submerged and let sit for 2-5 minute

  3. Whisk the mixture until fully combined and thick, if all the chips aren't melted you can heat in the microwave on 50% power for 10 second intervals until combined

  4. Switch to a spatula and make sure everything is melted and pour into a mason jar or 2.

  5. Let cool at room temperature then store in the fridge for about 2-3 weeks, if you use clean utensils every time to scoop some fudge into a separate bowl to heat, it could last longer
