Keto Van Camping

Camping with a van, car or a camper makes keto even easier, there are endless possibilities. Whenever we are car camping we always bring way more stuff than we can ever eat, lol. But you never know what you'll be in the mood for! I always bring keto salty and sweet snacks galore plus the meals that we are planning to eat, coffee and plenty of keto drinks of course.

Keto Camping Meals for this trip: Recipes below!

Burgers - Biscuit bun, avocado, avocado oil mayo, lettuce and cheese

Loaded Pork Rinds and quest chips - Chicken taco strips, sour cream, lettuce, salsa, avocado and cheddar cheese

Keto Biscuits and Sausage Gravy- Butter, avocado oil spray, eggs, cheddar cheese, homemade sausage gravy and biscuits (biscuit video link: https://www.youtube.com/watch?v=K8I2y2C9Uu0 )

Hot dogs (didn't end up eating)





Chicken taco seasoning: 2 lbs. chicken breast, cut into thin strips

1 tsp. Cajun

2 Tbs. Chili powder

1/2 tsp. Garlic powder

1/2 tsp. Onion powder

1/2 tsp. Crushed red pepper (or cayenne pepper)

1/2 tsp. Oregano

1 tsp. Paprika

1 Tbs. Cumin

2 tsp. Salt

1 tsp. Lakanto golden monkfruit sweetener ( https://amzn.to/2ShMYTj )

4 Tbs. Avocado oil

Mix everything in a big ziplock bag, cook on medium heat until fully cooked. Top the chips and/or pork rinds with cheddar cheese then add the hot chicken. Top with any keto toppings you'd like!


Keto Sausage Gravy Recipe:

1 Large onion (medium diced)

2 Tbs. Bacon fat (or any keto fat)

Sprinkle of salt and pepper

-Sauté over medium heat until soft

1 lb. Ground pork sausage

- Add, break up and cook all the way threw

1 1/2 Cups Heavy Cream

- Add and reduce for 4 minutes until slightly thickened

1/2 tsp. Crushed red pepper

1 tsp. Arrowroot powder (starch)

- Sprinkle arrowroot while stirring to combine, taste and add salt and pepper if needed


I placed into a Tupperware container and let cool then placed in the fridge.

To reheat while camping add a tiny bit of heavy cream to the pan with the cold sausage gravy and cook on low until it starts to bubble. Scoop over the eggs and biscuits add cheese if desired.





Keto camping can be as simple or as complicated as you want to make it. These are just the meals I took on this camping trip but I love cooking and eating!!!! So I always go above and beyond.
